Biscuits are considered one of the brittle sweets that many people like to eat, and they are usually eaten with a cup of hot tea or coffee and in all seasons of the year. Chefs have excelled in making biscuits, as there are plain biscuits, stuffed biscuits, or mixed with nuts, and there are those with a cocoa or vanilla flavor. In this article, we will present a method for preparing a type of biscuit, known as ammonia biscuits.
Ammonia biscuits
đź’ Ingredients:
- A kilo of white flour, all-purpose, sifted well before use.
- A cup and a half of coarse white sugar.
- Six medium-sized eggs, at room temperature.
- A teaspoon of vanilla extract, or vanilla powder.
- Half a cup of liquid milk, and the amount can be increased as needed.
- If liquid milk is not available, two tablespoons of dry milk can be dissolved in a cup of water, and used as needed.
- A teaspoon of ammonia.
- A cup and a quarter of ghee, or vegetable oil as desired.
đź’ Method:
- Mix the white sugar with the ghee well using an electric mixer, until the sugar dissolves.
- Add the six eggs to the sugar and ghee, gradually while continuing to mix, until you are sure that the ingredients are well mixed together.
- Mix the flour with the ammonia well.
- Add the egg mixture to the flour, and knead well, until a soft dough is formed.
- Add the liquid milk to the dough gradually, you may use half a cup or a full cup or less, depending on the softness of the dough.
- Add the dough to the cream funnel, and if the funnel is not available, it can be placed in a thick, cohesive plastic bag, and make a hole in its tip to form the biscuits.
- Shape the biscuit pieces in a baking tray, and bake in the oven at a medium temperature until they turn red and become crunchy.
- Leave on the table until cool, serve cold with a cup of tea, coffee or any other drink.
Sudanese ammonia biscuits without eggs
đź’ Ingredients:
- Five cups of all-purpose white flour.
- Two hundred and fifty grams of cream.
- A cup of liquid milk, it must be cold.
- A cup of white powdered sugar.
- A tablespoon of ammonia.
- A teaspoon of baking powder.
- A teaspoon of vanilla extract.
đź’ Method:
- Mix the fine sugar with the amount of cream well, until its consistency becomes similar to cream.
- Mix the liquid milk with the ammonia, and stir well until the ammonia dissolves in the milk.
- Add the milk mixture to the cream mixture, and stir well.
- Mix the flour with the baking powder, and stir well.
- Add the milk and cream mixture to the flour, and stir the mixture well until a soft dough is formed.
- Leave the dough for a period ranging from a quarter of an hour to half an hour to rest.
- Form the biscuit dough on a baking tray, and roast in the oven at a medium temperature.
- Leave to cool, and serve.
