Lotus cheesecake is one of the favorite sweets, spread around the world, of Greek origins, dating back two thousand years BC.It was used by the Greeks in their wedding celebrations, and as a source of energy for the players participating in the Olympic Games, because of its sugar, butter, and flour.
After the Romans entered Greece, they added eggs to the cheesecake, and called it Liboma dessert, and it was very popular at the time, as it was presented in their official celebrations, religious and popular occasions, and then it was transferred to Europe، they added cream cheese and caramelized sugar to it.

🔹Lotus biscuit bag.
🔹A tablespoon of soft butter.
🔹Two tablespoons of cream.
Filling:
🔹Three cans of Philadelphia cheese.
🔹A cup and a half of whipping cream.
🔹A teaspoon of vanilla.
🔹Two tablespoons of sugar.
To cover:
🔹a box of lotus butter.
🔹Quarter cup of whipping cream.
preparation
🔹put the lotus biscuit in the food processor, and grind it until it becomes a smooth powder.
Add butter and cream to it, and continue stirring until it gets a cohesive dough from lotus biscuits.
🔹Put the dough in the cheesecake mold, place it well at the bottom, then put it in the oven for only five minutes, until it consolidates.

🔹put the whipping cream in the mixer bowl, beat it until its texture thickens, then add it to the cream cheese, and stir it well until the ingredients are homogeneous together.
🔹Add the vanilla and sugar to the filling, and continue stirring until we get a creamy, smooth, and light mixture.
🔹Pour the filling on the surface of the cheesecake, distribute it evenly in all directions, and straighten its surface with a flat knife, until we get rid of all the bumps, and its surface becomes smooth.
🔹We put it in the refrigerator for at least six hours, until the ingredients are firm and ready to serve.

🔹Twenty-five lotus biscuits.
🔹Half a cup of soft butter.
For the filling:
🔹Three eggs.
🔹Half a cup of sugar.
🔹A teaspoon of vanilla.
🔹Two cans of Philadelphia cheese. 🔹A cup of whipping cream.
🔹Three tablespoons of starch.
To cover:
🔹a box of lotus cream.
Preparation
🔹Mix the lotus biscuits, with the tea biscuits, add the melted butter, and stir well until combined.
🔹Grease the cheesecake mold with a small amount of butter, then place the biscuit dough at the base.
🔹Put the mold in the oven at a temperature of one hundred and eighty, for ten minutes, until the biscuits are firm.
Preparation the filling
🔹In a bowl the mixer, put eggs, sugar, and vanilla, mix it on high speed until we have a creamy mixture.
🔹Add the amount of cheese, and continue mixing until the cheese is completely dissolved with the ingredients, put the cream and starch, and mix until the ingredients are homogeneous for two minutes.
🔹Pour the filling into a cheesecake mold, straighten its surface, then put the mold in a larger tray, pour water between them, then put it in the oven at a temperature of one hundred and thirty for an hour.
🔹Turn off the oven, leave the cheesecake mold in it for another half an hour, then take it out and put it to cool completely at room temperature for an hour.
🔹Distribute a rich layer of lotus cream on the surface of the cheesecake, and decorate it with pieces of lotus biscuits.
