Basbousa | Semolina Cake
How to make The original basbousa
💠Ingredients:
🔹two cups of semolina flour.
🔹Two cups of yogurt.
🔹A cup of sugar.
🔹A quarter cup of corn oil.
Three tablespoons of grated coconut.
🔹A teaspoon of baking powder.
🔹A quarter of a teaspoon of salt.
💠For garnishing: pistachios or peeled almonds and cut in half.
💠Method of preparation:
🔹We prepare a large plate and put semolina flour and grated coconut, add sugar and baking powder, and then sprinkle a small amount of salt in one dish and stir the ingredients well.
🔹Gradually add to the mixture a quarter cup of oil, two cups of milk, and knead well with hands until it becomes a soft dough.
🔹We cut the basbousa after extending it in the tray as we want, and on each piece we add one or two grains of pistachios or almonds.
🔹Yogurt can be replaced with two cups of warm milk, in addition to the juice of one lemon and left for two hours, and then it can be used like milk
🔹We grease the tray with a little oil or any greasy substance, then put the mixture in it and spread it so that it is not more than 2 cm thick, and we work to balance its surface by hand until it becomes equal and not zigzag.
🔹We put it to redden for about fifteen minutes, before baking it in the oven.
🔹After fifteen minutes, put the tray in the oven on a medium temperature. For thirty minutes, we redden it from the bottom and make sure every period of its maturity.
🔹Then we redden the face from above, and pour syrup directly while it is hot , so that the syrup is cold or warm until it permeates well.
How to make Basbousa with cream
The following is the method of stuffed basbousa with cream.
💠Ingredients:
🔹a cup and a half of fine semolina.
🔹One and a half cup of powdered milk.
🔹One and a quarter cups of powdered sugar.
🔹One and a half teaspoons of baking powder.
🔹One finger of butter, at room temperature.
🔹Three cans of cream.
🔹Seven cans of cream, small size, for the filling.
🔹One cup of syrup.
🔹Pistachio, as desired, for garnish.
💠Preparation:
🔹put butter and add semolina, powdered milk, powdered sugar, and baking powder, and rub the mixture by hand.
🔹Add three cans of cream and stir well until it becomes like soft dough and mix the ingredients.
🔹Pour half of the mixture into a non-stick tray or an oven dish, after applying a little butter.
🔹We beat the fresh cream with a spoon to become liquid and add them over the basbousa layer, then put the remaining half of the dough on top of the cream simply so that the layers do not mix.
🔹Bake in the oven at 175 degrees for 30-35 minutes, then take it out of the oven, pour the syrup over it, decorate it with pistachios and serve,thus we have made a more delicious Palestinian basbousa with cream.

🔹Two eggs.
🔹Half a cup of vegetable oil.
🔹A tablespoon of baking powder. Toffee:
🔹250 grams of cream, for cooking.
🔹One cup of sugar.
To decorate
🔹three tablespoons of grated almond.
🔹Powdered sugar.
💠Preparation:
🔹beat the eggs with the sugar until the sugar dissolves, then add the cream.
🔹Mix the baking powder with semolina on the dryer, then add the semolina and coconut to the eggs and sugar, stir them well, then add the oil, and mix them again.
🔹Grease the tray with a little oil and pour the mixture into it, then bake it in the oven at 180 degrees, for 30 to 35 minutes.
💠To make the toffee:
🔹put the sugar in a saucepan on the fire until it turns dark brown, then add the cream and stir quickly until it boils.
🔹Leave the toffee to cool, then pour it over the basbousa while it is hot, and leave it to cool.
🔹Toast the grated almonds and sugar in a frying pan until the sugar becomes blond and sprinkle on the face of the basbousa.
How to make Basbousa with cinnamon and coconut:
The following steps are the way to prepare basbousa with cinnamon and coconut:
💠Ingredients:
🔹Two cups of semolina.
🔹Two cups of coconut.
🔹One cup of sugar.
🔹One cup of vegetable oil.
🔹One cup of flour.
🔹Two cups of regular milk.
🔹4 teaspoons of vanilla.
🔹4 teaspoons of baking powder.
🔹A tablespoon of vinegar.
🔹2 tablespoons of cinnamon.
🔹A cup of raisins.
🔹A cup of walnuts.
💠Preparation:
🔹Put the eggs and vegetable oil in a bowl, then add the sugar and vanilla and mix well.
🔹Add milk over the resulting mixture and stir well.
🔹Put the semolina, flour, cinnamon and baking powder in another bowl and stir well, then add all the liquid ingredients in the first bowl and mix well.
🔹Add coconut, raisins and walnuts to the second bowl and stir well.
🔹Put the mixture in a baking tray, after a little oil, and put it in the oven on low heat for 20-25 minutes to brown it from the bottom and fry it from the top.
🔹After it is finished,cut it and add the syrup while it is hot. Decorate as desired, and it is worth noting that pistachio basbousa can be made by replacing walnuts and raisins with pistachios, in addition to dispensing with cinnamon as well.
Orange basbousa:
💠The ingredients:
🔹 3 eggs.
🔹 One cup of sugar.
🔹A teaspoon of vanilla.
🔹A teaspoon of salt.
🔹One cup of milk.
🔹A cup and a half of orange juice.
🔹Three quarters of a cup of vegetable oil.
🔹Two cups of semolina.
🔹Half a cup of flour.
🔹Two teaspoons of baking powder.
💠Preparation:
🔹Put the eggs in a bowl, then add the sugar, salt and vanilla and mix well.
🔹Add milk, orange juice and oil and mix well with each other.
🔹Add the semolina and mix well, then add the flour and stir well.
🔹Add the baking powder, then put the mixture in a baking tray after greasing with a little fat and flour.
🔹Bake for 25 minutes from the bottom on low heat, then from the top for 10 minutes, to take a golden color.
🔹Cut it after it is cooked and add the syrup while it is hot.
🔹Leave to cool and decorate as desired.
Prepare the syrup for basbousa:

🔹one and a half cups of water.
🔹Two cups of sugar.
🔹A teaspoon of lemon juice.
🔹A teaspoon of blossom water.
🔹A teaspoon of rose water.
💠Preparation:
🔹In a saucepan, pour water and the sugar and stir until the sugar dissolves and the mixture begins to boil.
🔹When the mixture boils, add lemon juice to it.
🔹Let the mixture boil over a low heat until it becomes more intense.
🔹Turn off the fire, add rose water, blossom water, or any other sweeteners, and set the syrup aside to cool.
