  It is one of the famous types of sweets in the world, including the Arab world, especially the Levant. The origins of petit four go back to France and then it spread to all parts of the world. It was prepared in a traditional way during the cooling process of ovens that are made of bricks after lighting them on fire, and the word “piti” Four means in French: small oven.

  petit four is served on all occasions, along with coffee or tea, and has different types, the most important of which are: salty petit four, which is an appetizer, and an example is the baked meringe, puff pastries and biscuits.

💠Ingredients:

🔹Half a kilo of vegetable butter.

🔹Two hundred and fifty grams of sugar.

🔹Four eggs.

🔹Six hundred and fifty grams of white flour, for sweets.

🔹A pinch of salt.

🔹Half a tablespoon of vanilla.

🔹Half a tablespoon of grated lemon peel.

🔹Four teaspoons of cocoa powder.

🔹Half a cup of apricot-flavored jam.

💠Preparation:

🔹Place the butter, vanilla, and sugar in a medium bowl, mix well with a hand mixer, then add the eggs gradually to the mixture, and continue whisking.

🔹Gradually add the sifted flour to the previous mixture, and continue kneading by hand until it becomes a soft, cohesive dough.

🔹Divide the soft dough into two parts, then add cocoa to one part, and mix well.

🔹Shape the dough into different shapes, making two similar pieces from each shape, then placing them in a tray covered with parchment paper.

🔹Preheat the oven to one hundred and sixty degrees Celsius.

🔹Bake the petit four in the oven for no less than a quarter of an hour.

💠Preparation:

 🔹Put the butter, salt, eggs, sifted flour, baking powder, cocoa, sugar, and vanilla in a large bowl, then mix all these ingredients together by hand until you get a soft, cohesive dough.

 🔹Cover the bowl, and leave it in a warm place until the dough rests, for a period of not less than half an hour.

 🔹Turn on the oven at a temperature of one hundred and sixty degrees Celsius.

  🔹Cut the dough using a biscuit cutter, then place it on a tray covered in parchment paper.

 🔹Place the tray in the oven for at least ten minutes, until it is fully cooked.

💠Ingredients:

 🔹Add the sifted flour, baking powder, and three-quarters of the coconut, then mix until combined.

💠Preparation 

 🔹Place in a bowl each of: Eggs, vanilla and orange zest, then whisk well.

💠Ingredients: 

 🔹1/2 cup ghee or butter.

 🔹1/2 cup oil.

 🔹3/4 cup powdered sugar.

 🔹1/2 cup cocoa powder.

 🔹1/2 cup starch.

 🔹1 tablespoon Turkish coffee.

 🔹2 cups sifted flour.

 🔹For decoration, 1/2 cup of chocolate grains, with a quarter cup of liquid cream.

🔹Preparation 

 🔹Beat the oil and ghee with the sugar well (one of the them can be replaced with butter, and you can also beat with an electric or manual mixer).

 🔹Gradually add cocoa while continuing to whisk.

 🔹Add starch and Turkish coffee to the mixture and knead the mixture well.

 🔹Add the amount of flour to the rest of the ingredients, knead all the ingredients well, then leave them in the refrigerator for 10 minutes.

💠Ingredients: 

🔹1 and 1/4 cup of flour.   

🔹3/4 cup of butter. 

🔹1 egg. 

🔹1 teaspoon of vanilla. 

🔹1/2 teaspoon of baking powder. 

🔹1/2 cup of powdered sugar. 

🔹1/4 cup of finely ground pistachios.

💠Preparation: 

 🔹Beat the butter (at room temperature) with the powdered sugar using an electric mixer.

 🔹Add the egg and vanilla (if using liquid vanilla, take the amount of the bottle cap), then whisk the mixture.

 🔹Add the rest of the petit four ingredients to the mixture, which are: Flour, ground pistachios, baking powder and then mix again.
 
 🔹The petit four are formed either using a petit four mold, or manually.

🔹Arrange the petit four in a non-stick tray (it is preferable to use parchment paper).

 💠Preparation: 

 🔹Place the eggs in the food processor, then add the sugar and vanilla, and beat at medium speed until the sugar dissolves completely.

 🔹Add the butter and continue whisking until the ingredients are mixed together.

 🔹Put the flour and salt in a bowl, then stir them, then add the flour gradually while continuing to whisk until it becomes a smooth and cohesive mixture.

🔹Place the dough on the kitchen table, then add the lemon zest and knead the dough by hand.

 🔹Add the coconut and continue kneading until the ingredients are well mixed.

 🔹Shape the petit four into their own molds, then half them in the tray to be baked in, taking care to leave a space between one piece and the other.

 🔹Heat the oven to medium temperature, then bake the petit four for seven minutes or until the edges just start to brown.

It is also possible to dispense with the molds for preparing the petit four and shape it using a pastry bag. It is possible to place an amount of dough in a confectioner’s bag and then shape the petit four into the shapes we desire directly on the baking tray. It should be noted that it can be decorated with white chocolate, nuts, or vermicelli as desired.
