Delicious Kofta Recipes | Sofrat hadhramia
Kofta is one of the delicious side dishes that can be prepared with different types of meat, such as: chicken, minced meat or fish. It can also be cooked by frying or grilling.
Kofta is not only distinguished by its delicious taste, but also has many health benefits, as a 380-gram of kofta with potatoes contains 476 calories, 20 grams of fat, 13 grams of saturated fat, 118 grams of cholesterol, 41 grams of carbohydrates, and 35 grams of proteins.
Fried chicken kofta
💠Ingredients:
🔹A cup of breadcrumbs, called qarshala in other countries, can be prepared at home by drying the bread in the sun or on toast, then grinding it well.
🔹Egg white.
🔹A teaspoon of mixed spice.
🔹A tablespoon of fine coriander.
🔹¼ teaspoon of black pepper.
🔹Two teaspoons of salt.
🔹Half a cup of fine parsley.
🔹Two stalks of chopped green onions with their leaves.
🔹Two cloves of garlic, mashed.
🔹Egg yolk.
🔹Two cups of boiled and crumbled chicken meat.
🔹Four large potatoes.
🔹Corn oil for frying.
💠Preparation:
🔹Place the potatoes in a deep pot, then cover them well with water.
🔹Let the potatoes cook over the fire until they are completely cooked, then leave them aside until they can be peeled.
🔹Peel the potatoes while they are warm.
🔹Place the peeled potatoes in a deep dish, then add to it: chicken, egg yolks, garlic, onions, parsley, salt, pepper, coriander and spices.
🔹Use potato masher, or knead them with the rest of the ingredients with our fingers, until a rough textured dough is formed.
💠Coverage:
🔹Place the egg whites in a plate with high edges.
🔹Place the breadcrumbs in another wide dish.
🔹Take an amount of the potato mixture and shape it into a circular disc of medium thickness.
🔹Using our fingertips, brush the disc with a little egg white.
🔹Place the disc in the bread crumbs and turn it until it is completely covered on all sides.
🔹Place the kofta discs in a wide tray, then put them in the refrigerator for about thirty minutes.
🔹Put an amount of oil in a deep frying pan, so that the height of the oil reaches approximately two inches.
🔹Place the frying pan on medium heat and wait until the oil is completely heated.
🔹Fry the chicken kofta in the heated oil until it is cooked or golden.
🔹Transfer the chicken kofta when it is cooked using a large slotted spoon, then place it on kitchen paper to get rid of excess oil.
🔹Transfer the chicken kofta to appropriate plates, ready to serve.
Oven-baked meat kofta
💠Ingredients:
🔹Half a kilogram of finely minced meat.
🔹Half a bunch of finely chopped parsley.
🔹Two finely chopped onions.
🔹Salt, to taste.
🔹A spoonful of spice.
🔹A spoonful of chili, or as desired.
🔹Two tomatoes.
Two onions cut into medium slices.
🔹Three half-fried potatoes.
💠Sauce ingredients:
🔹one and half cup of water.
🔹A tablespoon and a half of tomato sauce.
🔹Salt, to taste.
🔹A teaspoon of chili.
💠Preparation:
🔹Mix the minced meat with chopped onions, parsley, spices, salt, and chili well.
🔹Shape the kofta dough into small circles, and arrange them in a medium-sized tray.
🔹Preheat the oven to 180 degrees, and place the tray in it for ten minutes, until the water dries up.
🔹Take the tray out of the oven, and arrange the tomato slices and potatoes on top of it.
🔹Mix water, tomato sauce, salt, and chili well until a smooth mixture is formed, then pour it over the kofta tray.
🔹Cover the tray with tin foil.
🔹Preheat the oven to 200 degrees Celsius, place the tray in it, and leave it for at least half an hour, until all the ingredients are cooked.
🔹Remove the tin foil from the tray five minutes before taking it out of the oven, and keep it until it browns and takes on a golden color.
Fried kofta
💠Ingredients:
🔹One kilogram of finely minced meat.
🔹A finely chopped onion.
🔹A cup of chopped parsley.
🔹Two tablespoons of sweet pepper.
🔹Half a spoon of black pepper.
🔹A cup of vegetable oil.
🔹Salt, to taste.
💠Preparation:
🔹Mix onions, meat, spices, parsley, black pepper, and salt well in a deep bowl, until all ingredients are combined.
🔹Place the mixture in the electric blender, and mix for three minutes.
🔹Divide the kofta into small balls, or the size you want.
🔹Heat the vegetable oil and fry the kofta over high heat. When it turns golden, take it out of the oven and serve it.
Charcoal grilled kofta
💠Ingredients:
🔹Five hundred grams of minced meat.
🔹Large onion.
🔹Two cloves of garlic, finely mashed.
🔹A teaspoon of fine coriander.
🔹Half a teaspoon of black pepper.
🔹A teaspoon of cumin.
🔹Two teaspoons of salt.
🔹Corn oil.
🔹coal.
🔹Onions, parsley, and sumac for serving.
💠preparation:
🔹Grate the onion using a grater, put a spoonful of salt over the onion, and leave it for ten minutes.
🔹Place the onion over the meat, keeping the onion water aside, then add the garlic, coriander, pepper, cumin, and a spoon of salt, and knead the meat with your fingertips until it becomes very smooth.
🔹Moisten your hands with onion water, and shape the kofta onto wooden skewers into the shape of fingers.
🔹Heat the grill pan, then place the skewers in it, cover them and leave them for a few minutes.
🔹Flip the skewers to the other side, and leave them for ten minutes until they are cooked.
🔹Place a piece of aluminum foil in the pan, put a little oil in it, then put a piece of burning charcoal.
🔹Immediately cover the pan, leave it for two minutes until the kofta absorbs the charcoal smoke, then dispose of it.
🔹Place slices of onion in a serving bowl, distribute a little parsley and sumac, then place the kofta and serve.
Grilled kofta with French bread
💠Ingredients:
🔹A loaf of French bread.
🔹Half a kilogram of minced meat.
🔹Two grated onions.
🔹Half a teaspoon of meat spices.
🔹A sprinkle of each: onion powder, garlic powder, ginger powder, baking powder, and cinnamon.
🔹A teaspoon of black pepper.
🔹Teaspoon of salt.
🔹Salad to serve.

🔹Mix all ingredients except onions until you get a consistent dough.
🔹Soak the onions for half an hour in hot water.
🔹Take the dregs from the onions only, and filter them, keeping the water.

🔹Place the bread dough on top of the kofta dough.

Diet kofta on charcoal
💠Ingredients:
🔹A small cup of bulgur.
🔹Grilled kofta spices.
🔹A tablespoon of butter.
🔹One kilogram of cured, fat-free meat.
🔹Two cloves of garlic.
🔹Two large onions, cut into medium-sized pieces.
🔹A teaspoon of cinnamon.
🔹Ground black pepper.

🔹Wash the bulgur well with water, then soak it in a bowl of water for ten minutes.
🔹Cut the meat into cubes and add spices, garlic and onions to it, then chop all the ingredients together well.
🔹Filter the bulgur from the water well, then add it to the previous ingredients and continue chopping them together.
🔹Add the butter to the prepared meat mixture, stir together to ensure it melts, then put it in the refrigerator for half an hour.
🔹Take the kofta mixture out of the refrigerator, then shape it onto barbecue skewers and place them on the grill, stirring them until they are completely cooked.

Chicken kofta with hummus with tahini
💠Ingredients:

🔹Ten sprigs of parsley.
🔹Two cloves of garlic.
🔹Six pieces of chicken.
🔹Small spoon of salt.
🔹Large onion, chopped.
🔹Two tablespoons of corn oil.
🔹Ten sprigs of dill.

💠Ingredients for hummus with tahini:
🔹Two tablespoons of tahini.
🔹A quarter teaspoon of salt.
🔹Two big spoons of lemon juice.
🔹A can of boiled chickpeas.
🔹For frying: corn oil.

🔹A little parsley.
🔹A few black olives.
🔹Slices of carrots.
🔹Slices of cucumber.
🔹Slices of tomatoes.
💠Preparation:
🔹Place the disc with small holes in the meat grinder, and chop the garlic, chicken, onion, dill and parsley.
🔹Add salt, oil, pepper and spices.
🔹Stir the mixture to obtain a cohesive dough.
🔹Shape the dough into medium-sized fingers.
💠For frying:
🔹Heat half a cup of oil in a wide frying pan and gradually place the kofta fingers in batches.
🔹Fry the kofta until it is golden in color and remove it from the pan.
🔹Serve the kofta with vegetables.
💠Preparing hummus with tahini:
🔹Place the tahini, chickpeas, salt and lemon juice in the blender bowl and mix the ingredients at medium speed to obtain a smooth mixture.
