Hummus with tahini
💠Ingredients:
🔹Three quarters of a cup of tahini.
🔹Two cups of dry chickpeas.
🔹Three cloves of garlic.
🔹Half a cup of lemon juice.
🔹Half a teaspoon of fine cumin.
🔹Two teaspoons of salt.
🔹Red pepper.
🔹Olive oil.
💠Preparation:
🔹Place the humous in a casserole, cover it with water, and leave it overnight.
🔹Wash the humous with clean water, put them back in the casserole, immerse them again in water, and put the cumin on top.
🔹Cover the humous, and put them in the microwave for ten minutes until they boil.
🔹Stir the humous, cover them again, and put them in the microwave for forty to fifty minutes until they are cooked, stirring them constantly, and adding water to them when needed.
🔹Leave the chickpeas covered for ten minutes to continue cooking, then drain the water.
🔹Reserve a cup of water as needed, and a few chickpeas for garnish.
🔹Mix tahini, chickpeas, lemon, garlic, and salt in a food processor until you get a smooth mixture, and add a little water if the chickpeas are thick.
🔹Pour the chickpeas into a serving dish, put olive oil on top, and garnish with chickpeas and red pepper.
Rosary of chickpeas with tahini
💠Ingredients:
🔹Two cups of boiled chickpeas.
🔹A quarter cup of tahini.
🔹Two cloves of crushed garlic.
🔹A quarter cup of butter.
🔹A tablespoon of water.
🔹Three tablespoons of lemon juice.
🔹A tablespoon of pine nuts.
🔹A quarter teaspoon of ground chili.
🔹A teaspoon of salt.
🔹Arabic bread, pickles for serving.
💠Instructions:
🔹Mix tahini, garlic, water, lemon juice, and salt in a bowl using a hand mixer, and stir until the tahini becomes very smooth.
🔹Add half a cup of chickpeas, and mash the chickpeas with the tahini using a mortar, until it is very smooth.
🔹Add the remaining chickpeas, stir with the tahini, then pour the chickpea rosary into the serving bowl.
🔹Place the butter and pine nuts in a frying pan on the stove, and stir the pine nuts until they turn light golden.
🔹Place the pine nuts and butter on top of the rosary, then distribute the chili sauce, and serve the rosary with Arabic bread and pickles.
