Dahdah is a popular dessert that dates back to Palestinian cuisine, but it quickly spread in the Levant, specifically in Jordan. In addition to being delicious, easy to prepare, and simple in ingredients, it is served at many times, including Ramadan, feasts, and many others. In this article, we will learn how to prepare Palestinian Dahdah.

💠Dough ingredients:

🔹Six cups of coarse semolina.

🔹A cup of melted ghee.

🔹A tablespoon of instant yeast.

🔹A cup of sifted white flour.

🔹A cup of warm yogurt.

🔹A teaspoon of baking powder.

🔹A cup of fine white sugar.

🔹A tablespoon of finely ground turmeric.

🔹A cup of vegetable oil.

💠Filling ingredients:

🔹Two cups of coarse semolina.

🔹Half a cup of vegetable oil.

🔹Half a cup of melted ghee.

🔹Two cups of fine white sugar.

🔹2 cups of coconut.

🔹2 tablespoons of finely ground cinnamon.

🔹1 cup of warm water for the dough.

💠Preparation:

🔹Choose a suitable bowl and put in it the semolina, white flour, instant yeast, baking powder, white sugar, and turmeric, and mix all these ingredients together with a wooden spoon or using the fingertips.

🔹Add the melted ghee and vegetable oil to the previous mixture, and start using the hand or electric mixer as desired, to mix the ingredients together well until you get a very cohesive dough.

🔹Add the yogurt to the previous mixture and continue stirring until you get a cohesive dough.

🔹Divide the dough into two parts, and leave it aside to rest a little.

🔹Start preparing the filling by placing the oil and melted ghee in a suitable bowl, and start adding white sugar, coconut, and cinnamon, and mix them well together, then start adding water gradually until you get a cohesive mixture.

🔹Choose a suitable sized and circular tray, and grease it with a little vegetable oil or tahini as desired, then place the first part of the dough in the tray in a flat manner, then place the filling on top of it evenly using the hand, then divide the second part of the dough into two equal parts, and place the first part on the edges of the tray using the hand, and place the second half in the middle of the tray and spread it using a fork, and engrave on the dough as desired, then leave the tray in a warm place for a full hour until it ferments well.

🔹After the time has passed, put the tray in the oven at a temperature of 180 degrees Celsius, for half an hour until it takes on a golden color, and leave it aside until it cools, then serve it with a cup of juice.
