Spleen
Spleen is considered one of the famous dishes in the Arab world, which is characterized by its delicious taste in addition to its high nutritional value; as the internal organs of animals contain many important elements for the human body, so people who suffer from a deficiency in some elements in their bodies find refuge in this dish to compensate for the deficiency they have. Therefore, it was necessary to explain how to prepare spleen at home in a healthy way that gives a delicious taste.
Preparing the Spleen
💠Ingredients:
🔹One and a half kilos of spleen.
🔹A bunch of cinnamon sticks.
🔹Bay leaves.
🔹Five cardamom pods.
🔹A tablespoon of salt.
🔹A tablespoon of black pepper.
🔹A tablespoon of mixed spices.
🔹A bunch of finely chopped parsley.
🔹Three tablespoons of hot pepper.
🔹Olive oil.
🔹An onion cut into four pieces.
🔹Eight cloves of crushed garlic.
💠Preparation:
🔹Wash the spleen well and remove the thin skin that covers it, then wash it again with salt and flour, and wash it again a third time, then drain it from the water.
🔹Open each piece of spleen from the middle using the tip of a knife.
🔹Put a little oil in a pot on the fire, then put on top of it the spleen, cinnamon sticks, bay leaves, cardamom seeds, and chopped onion, then cover the pot and leave it on the fire until it is cooked, then drain it from the water.
🔹Put the chopped parsley in a deep bowl, and leave a little of it for decoration.
🔹Add the crushed garlic to the bowl, in addition to the hot pepper, salt, black pepper, mixed spices, and olive oil, and mix the ingredients well.
🔹Take a tablespoon of the filling, and stuff the spleen with it from the open side until the quantity is finished.
🔹Put the spleen pieces in a tray, then put the rest of the filling on top of it, then add half a cup of water to it, then cover the tray with tin foil and put it on the fire for a while.
🔹Remove the tin foil and put the tray in the oven until the spleen's face turns red.
🔹Take the tray out of the oven and place its contents in a serving dish, sprinkle the rest of the chopped parsley on top, then place the bread and salad next to it.
Spleen with minced meat
💠Ingredients:
🔹A kilo of spleen.
🔹A tablespoon of salt.
🔹A tablespoon of black pepper.
🔹A teaspoon of ground cardamom.
🔹Finely chopped parsley.
🔹Finely chopped onion.
🔹A kilo of finely minced meat.
🔹Vegetable oil.
💠Preparation:
🔹Clean the spleen and boil it as in the previous recipe and drain it from the water.
🔹Put the oil in a pan on the fire, then put the onion on top of it, and a little salt until it wilts, then add the minced meat, black pepper, cumin, ground cardamom, and a little salt, and stir the ingredients until the meat is cooked.
🔹Take an amount of meat with a tablespoon and stuff the spleen in it until the amount is finished.
🔹Put the spleen in the tray, put oil on its surface, and put it in the oven until it turns red. Then take it out, put it in the serving dish, and sprinkle parsley on top of it.
