Teriyaki Marinade for Grilled Chicken

đź’ Ingredients:
  • Chicken cut into quarters.
đź’ Teriyaki Marinade Ingredients:
  • Soy sauce.
  • Brown sugar.
  • Black pepper.
  • Vegetable oil.
đź’ Preparation:
  • Place the chicken in a bowl, add half the amount of Teriyaki Marinade ingredients to it, and mix the chicken with the marinade well so that it absorbs all the flavors.
  • Store the chicken in the refrigerator for an hour, then grill it on a hot grill and brush it with the rest of the marinade until cooked.

Whole Grilled Chicken Marinade

đź’ Ingredients:
  • A whole chicken with bone and skin "weighing approximately one and a quarter kilos".
đź’ Marinade Ingredients:
  • A tablespoon of vinegar.
  • Two slices of onion.
  • A tablespoon of olive oil.
  • Half a teaspoon of ground spices consisting of: black pepper, sweet pepper, cinnamon, cardamom and a pinch of nutmeg.
  • A tablespoon of salt.
  • A teaspoon of finely crushed garlic.
  • A bay leaf, cardamom seeds, cinnamon sticks and lemon slices.
  • Two teaspoons of dried thyme.
đź’ Preparation:
  • Season the chicken from the inside and outside with all the marinade ingredients except for the salt, and put slices of onion inside it and keep it in the refrigerator for a whole day, and take it out an hour before starting to cook and add salt to it from the inside and outside.
  • Bring an empty short-necked bottle, fill the bottle with water and place it on a round oven tray so that it has edges, and season the chicken skin with thyme and spices, and remove the onions.
  • Fix the chicken well on the bottle, and fix the wings above the breast with wooden sticks, and put the tray in a hot oven at a high temperature, and pour some water into the base of the tray, and add a lemon slice, bay leaf and cinnamon stick inside it.
  • Grill the chicken for half an hour on high heat, then reduce the heat to medium and grill for an additional hour and a half, rotating the tray approximately every third hour by a quarter of a turn until the chicken is cooked on all sides, and rotating the bottle until the back and breast of the chicken are browned.
  • Add boiling water to the base of the tray whenever the water dries up, and remove the chicken from the oven after it is cooked and wait a third of an hour, then gently lift it from the bottle and serve with mayonnaise mixed with garlic.

Charcoal Grilled Chicken Marinade

đź’ Ingredients:
  • Two small chickens cut into quarters, keeping the bones and skin.
  • A quarter cup of lemon juice.
  • A tablespoon of garlic powder.
  • A tablespoon of tomato paste.
đź’ Spice ingredients:
  • A tablespoon of paprika or hot pepper.
  • Half a teaspoon of cumin.
  • A teaspoon of sweet pepper.
  • Black pepper and salt - to taste.
đź’ Preparation:
  • Marinate the chicken pieces in all the marinade ingredients for a period ranging from ten hours to a full day before cooking.
  • Grill the chicken over charcoal after placing it on the grill for a third of an hour at a medium temperature, turning it on both sides.

Sweet and Sour Chicken

đź’ Ingredients:
  • 2 tablespoons corn oil.
  • 4 pieces of chicken breasts.
  • 3 cloves of crushed garlic.
  • 3 large tomatoes, seeded and diced.
  • 3 large cucumbers, seeded and diced.
  • 6 slices of pineapple, diced.
  • 2 stalks of green onions, sliced.
đź’ Sauce ingredients:
  • 2 cups of vinegar.
  • 1 ½ cups of sugar.
  • 1 cup of ketchup.
  • 1 teaspoon of salt.
đź’ Preparation:
  • Put the oil in a medium-sized pot and place the pot on medium heat to heat the oil. Add the chicken and stir until golden.
  • Remove the chicken pieces from the pot and place them on a side plate.
  • Add the garlic and stir until browned, then add the chicken pieces and stir for a few seconds, then add the tomatoes, cucumber, pineapple and onions and stir until the vegetables are soft.
  • Add the sauce, cover the pot and leave the chicken to cook for a quarter of an hour.
  • Serve sweet and sour chicken with rice or noodles.

  • Put the vinegar and sugar in a pot and place it on medium heat until it starts to boil.
  • Reduce the heat and let the sauce boil for ten minutes until it becomes thick, then add the ketchup and salt and let it boil for a minute.
