Vinegar
Vinegar is the liquid result from the dilution of acetic acid from the fermentation of various fruits or berries. It is used in many therapeutic and cosmetic aspects, and in preparing many different dishes. In this article, we will mention the method used to prepare some types of vinegar, which are: apple cider vinegar, date vinegar, and grape vinegar.
Apple Cider Vinegar
Ingredients:
- Ten apples.
- Amount of water.
How to prepare:
- Wash the apples well, then cut each apple into four quarters.
- Arrange the cut apples in a tray and leave them uncovered at room temperature until they turn brown.
- Prepare a sterilized glass jar and arrange the apples in it, making sure the jar has a large mouth to facilitate work.
- Pour water into the jar until all the apple pieces are submerged.
- Cover the mouth of the jar with a clean cloth, but without tightening it tightly; so that oxygen can enter easily.
- Place the jar in a dry, dark, and non-cold place, and leave it in this position for six months, making sure to move it once a week. After this period, you will notice the formation of a layer of bacteria on the surface of the jar, which turns the alcohol into vinegar.
- Filter the vinegar using a juice strainer, and place it in another container with a wide mouth.
- Cover the other bowl in the same way, and leave it aside for an additional period ranging from one month to one and a half months.
- Store the vinegar in the refrigerator.
Making Date Vinegar
Ingredients:
- One and a half kilograms of dates.
- Two and a half liters of water.
- Two teaspoons of sugar.
- Two teaspoons of instant yeast.
How to prepare:
- Remove the pits from the dates, and place the fruits in a glass jar, taking care not to fill it completely; because the dates will swell and grow.
- Submerge the dates in water.
- Add the amount of yeast to the jar.
- Add the amount of sugar to the previous ingredients.
- Cover the jar well and tightly, then place it in a warm and dark place, such as a kitchen cupboard.
- Leave the jar for forty days before opening it.
- Filter the resulting liquid using a clean cloth, and place it in a bottle until use.
Making grape vinegar
Ingredients:
- A quantity of grape clusters.
How to prepare:
- Wash the grapes well to get rid of dirt and dust stuck on them.
- Dry the grapes well from the washing water, by placing them in a well-ventilated place away from insects or dust.
- Arrange the grapes in a sterile, dry glass jar.
- Cover the jar with a piece of cloth, then place it in a well-ventilated place.
- Leave the glass jar untouched for a period ranging from forty-five to sixty days.
- Filter the vinegar into another container using a clean piece of cloth.
- Store the vinegar in the refrigerator until use.
