Classic Nachos with Cheddar Sauce Dip


💠 Ingredients:

💎 Nachos ingredients:
  • Five triangle tortilla.
  • Half a kilo of ground beef.
  • A can of black beans, cooked and drained.
  • A cup of Mexican salsa.
  • Two cups of grated red cheddar cheese.
💠 Cheese sauce ingredients:
  • Two tablespoons of butter.
  • Two tablespoons of flour.
  • A cup of milk.
  • A pinch of salt and white pepper.
  • Three cups of grated red cheddar cheese.
💠 Additions as desired:
  • A sprinkle of chopped green coriander.
  • A little of each of:
  • Jalapeno rings slices.
  • Spicy pepper slices.
  • Sour cream.
  • Thin green onion slices.
💠 Preparation method:
  • Bring a suitable baking tray and arrange half the amount of tortilla slices in the tray.
  • Preheat the oven to 160 degrees Celsius.
  • Grill the meat in a medium-sized pot over medium heat with a little vegetable oil until it turns brown.
  • Add the black beans and sauce to the meat with half the amount of cheese and continue stirring well.
  • Place half the amount of the mixture on the tortilla slices and bake in the oven for ten minutes until the cheese melts.
  • Add a second piece of tortilla on top of the meat mixture, then add the rest of the mixture on top of it and the rest of the cheese and bake in the oven for ten minutes.
  • Add the rest of the additions to the tortilla.
💠 Preparing the cheese sauce:
  • Melt the butter in a medium-sized saucepan over medium heat, then add the flour and continue stirring until it is toasted.
  • Add the milk to the saucepan while whisking continuously, then raise the temperature and continue stirring until you get a medium-thick sauce.
  • Add salt, pepper, and grated cheese, stirring well, then lower the temperature and leave the cheese until the cheese melts completely and the sauce thickens.
  • Serve the nachos with the cheese sauce.

Cheddar sauce


💠 Ingredients:
  • A cup of 1% low-fat yogurt.
  • Four teaspoons of all-purpose flour.
  • A quarter teaspoon of salt.
  • Three hundred and fifty grams of cheddar cheese (about a third of a cup).
  • A quarter teaspoon of freshly ground black pepper.
💠 How to prepare:
  • Mix a quarter cup of milk and flour in a medium-sized saucepan over heat, continuing to stir with a metal clip.
  • Add the remaining three-quarters of a cup of milk to the mixture, then season with salt and continue stirring.
  • Leave the mixture to boil over medium heat, then reduce the heat to low and leave the mixture over low heat for two minutes until it thickens, continuing to stir.
  • Remove the mixture from the heat, then add the cheddar cheese and continue stirring until it melts completely, making sure that there are no lumps in the sauce.

Nachos Cheese Sauce


💠 Ingredients:
  • 2 tablespoons of flour.
  • 1 cup of whole milk.
  • 1 and a half cups of medium-flavored cheddar cheese.
  • 2 tablespoons butter.
  • 1/4 teaspoon of salt.
  • 1/4 teaspoon of chili powder.
💠 How to prepare:
  • Put the flour and butter in a sauce pot over medium heat and continue stirring with a metal clip until you get a foamy mixture and until it boils.
  • Continue stirring for a minute over medium heat, then add the milk to the mixture.
  • Raise the heat to between medium and high and leave the milk on the heat while stirring until it starts to boil.
  • Remove the mixture from the heat immediately after the milk boils and after the mixture becomes very thick to the point that it coats the spoon (if the sauce thickness is more than desired, it can be diluted with milk).
  • Add the cheddar cheese directly to the mixture while continuing to stir. If the cheese does not melt well, you can put it for a while over low heat, taking care not to leave the cheese on the heat for too long.
  • Season the sauce with salt and chili powder.
