Pickles


Pickles are foods pressed in special jars with suitable pickling materials, which are served as a type of appetizer on the dining table. They are compatible with chicken recipes, such as broasted, shawarma, and shish tawook, as well as meat dishes such as burgers and grilled meat, in addition to grain dishes such as hummus, beans, and fatteh. There are several methods for pickling, some of which are with water and salt, some with lemon, or with vinegar and mustard.

Pickles play an important role in strengthening the immune system, especially those prepared at home; they are free of food colorings and preservatives, and despite their benefits, it is not recommended to eat them excessively; because they contain high amounts of salt, and they have many types, perhaps the most common of which are pickled cucumbers, lemons, eggplant, black and green olives, and tomatoes, which are the subject of this article, as we will present them in several ways.

Pickled tomatoes


💠 Ingredients:
  • Dried green tomatoes as needed.
  • A cup of salt.
  • A liter and a half of water.
💠 How to prepare:
  • Wash the tomatoes well, then cut them into thick circular slices.
  • Mix the salt and water, and stir well until the salt dissolves completely.
  • Pour the salt solution into the jar designated for pickling.
  • Put the tomato slices in the jar, and close it tightly.
  • Leave the pickled tomatoes for two weeks until the color of the tomatoes changes to light green.

Pickled cherry tomatoes


💠 Ingredients:
  • Four hundred grams of cherry tomatoes.
  • Fifty milliliters of white vinegar.
  • Twenty grams of salt.
  • Four cloves of garlic.
  • Twenty grams of fresh hot pepper.
  • Twenty grams of cumin seeds.
  • Twenty-five milliliters of lemon juice.
💠 Preparation method:
  • Mix vinegar, salt, garlic, red pepper, cumin, and lemon juice, and stir the ingredients well.
  • Wash the tomatoes, and place them in the designated jar.
  • Pour the spice mixture into the jar, and close it tightly.
  • Place it in the refrigerator until you get the appropriate pickling degree.

Pickled tomatoes with garlic


💠 Ingredients:
  • Half a kilo of small tomatoes.
  • Three cloves of garlic.
  • Half a spoon of salt.
  • A little chili pepper.
  • Half a spoon of ground cumin.
  • A tablespoon of lemon juice.
💠 How to prepare:
  • Wash the tomatoes well, and cut them from the top in the shape of the letter X.
  • Put the garlic, salt, chili pepper, and cumin in a mortar, and pound the ingredients until you have a smooth mixture.
  • Pour the lemon juice over the ingredients, and mix well.
  • Stuff each tomato with an appropriate amount of the prepared filling.
  • Sprinkle the stuffed tomatoes with a little lemon juice, and place them in a tightly sealed container.
