💠Ingredients:
- Two kilograms of green thyme.
- One kilogram of roasted sesame seeds.
- Half a cup of roasted and finely ground chickpeas.
- A cup of roasted and finely ground peanuts.
- A cup of ground sumac.
- A quarter cup of ground fennel.
- A quarter cup of ground anise.
- A quarter cup of ground coriander.
- Two tablespoons of ground cumin.
- Lemon salt, and salt to taste.
- 2 tablespoons of olive oil.
💠How to prepare:
- Wash and dry the green thyme well, remove the small stalks, and rub it by hand until it becomes soft.
- Peel the peanuts, roast them in a pan and leave them to cool.
- Rinse the chickpeas from impurities, as well as all the spices.
- Grind the thyme at the herbalist to obtain fine-grained thyme.
- Add two tablespoons of olive oil to the amount of ground thyme and rub it well by hand; this step is optional but gives the thyme a soft texture and a dark green color.
- Roast all the spices one by one, and grind them all.
