Jallab Juice
Jallab is one of the cold drinks that are prepared in large quantities during the holy month of Ramadan for fasting people. The manufacture of this drink is famous in a large number of Arab countries, specifically in Lebanon; where it is prepared in each of them in a different way, but there is a traditional way of making it that people know, which is based on stirring water with Jallab, then adding nuts to it such as pine nuts and almonds. Jallab is prepared from date molasses juice or seedless raisin molasses; so that the seedless grains are ground, then an amount of white sugar and rose water "orange blossom" are added to it, and a little fresh lemon juice, then the mixture is placed on the fire until it boils and becomes thick and heavy, after which it is left to cool, then it is filled in glass bottles, closed tightly, and left for several days until it is ready to drink.
Jallab Juice Making
💠Ingredients:
- Jallab concentrate.
- Soda.
- Ice.
- Pine nuts soaked in rose water.
💠How to prepare:
- Put the ice cubes, concentrated jallab and soda in an electric blender and mix well.
- Pour the mixture into a glass jug, then add the soaked pine nuts.
- Refrigerate until ready to use, or use immediately.
Preparing the jallab
💠Ingredients:
- A quarter cup of blond raisins.
- Half a cup of date molasses.
- Two cups of cold water.
- A quarter cup of pine nuts.
- Two sticks of cinnamon.
- Half a cup of grape molasses.
- A cup of concentrated rose syrup.
- Four cups of crushed ice.
💠Preparation method:
- Soak both: raisins and pine nuts in cold water for thirty minutes.
- Add both: date molasses, grape molasses and rose syrup in a tall glass jug.
- Burnt one end of a cinnamon stick until it starts smoking, then put the cinnamon stick in the jug and close its mouth tightly, to ensure you get the smoke flavor.
- Remove the cinnamon stick from the jug, then add the desired amount of crushed ice.
- Add the amount of water as desired.
- Add both: dried cranberries, pine nuts and serve.
Jallab cups and Aish Al Saraya
💠Ingredients:
- Three cups of concentrated jallab syrup.
- Slices of stale bread.
- A teaspoon of lemon juice.
- Five tablespoons of butter at room temperature.
- Cream.
- Pine nuts.
💠Preparation method:
- Brush the bread slices with butter, then toast them in the oven until they are well dried.
- Heat the concentrated Jallab syrup over the fire with the addition of lemon, then arrange the bread in the syrup and leave it on low heat until it is completely absorbed.
- Put some cream in the serving cup and a piece of bread on top of it, then decorate it with pine nuts and serve.
